- 100 gr. of a wide pepper
- 1 garlic clover
- 8 Tortillas from Tortilleria superior ®
- 1/2 Boneless chicken breast, per-cooked
- 8 Tablespoons of frying oil
- 1/4 Grinned cheese
- Fried beans
- Chopped cabbage
- 1 Sliced tomato
Steps:
Step 1: Rinse the pepper in water and then grind it with the clover of garlic and add salt al dente until it it becomes thick.
Step 2: Dip the tortillas in the sauce from step 1 and fry them with one table spoon of oil in a frying pan, preferably a non stick pan.
Step 3: Fry the tortillas in plenty of hot oil making sure they don’t over fry, remember they must remain flexible to be wrapped. Once done you can ad a layer of fried beans, some boneless chicken, roll it up in a taco and do the same with the rest of the tortillas. Serve the enchiladas and you can decorate with chopped cabbage and dress up with a little lemon and salt. And you’re done!
